This is a great recipe.. I have made this years ago but without the pintos beans and now i love pinto beans... This is great to serve at family gatherings or just for your friends. Enjoy...

Ingredients

  • 2 1/2 pounds lean grounded beef (90 % lean )
  • 3 tablespoons chili powder
  • 2 tablespoons all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder with parsley
  • 2 cups water
  • 1 can (15 oz.) pinto beans, rinsed and drained, optional
  • 4 1/2 cups corn chips
  • 2 cups shredded lettuce
  • 1 1/2 cups ( 6oz.) shredded cheddar cheese
  • 3/4 cup chopped tomatoes
  • 6 tablespoons finely chopped onion
  • - sour cream and minced cilantro, opitonal

How To Make southwest frito pie

  • Step 1
    In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the chili powder, flour,salt and garlic powder until blended; gradually stir in water. Add the beans,if desired. Bring to a boil. Reduce heat;simmer, umcovered, for 12-15 mins. or until thickened, stirring occasionally. To serve, divide chips among six serving bowls. Top with lettuce, cheese, tomatoes,and onion garnish with sour cream and cilantro if desired.
