Fajitas are an easy dinner option and this slow cooker version is fabulous. The meat is tender and absorbs the flavor of the spices and jalapeno. We opted for steak, but chicken would be super tasty too. These Crock Pot fajitas are great if you're busy and figuring out dinner. The slow cooker does all the work for you. Just set out your favorite toppings and each family member can assemble their own fajitas.

Ingredients
- 2 pounds flank or skirt steak or chicken breast
- 1 - onion, thinly sliced
- 1 - red pepper, sliced in strips
- 1 - green pepper, sliced in strips
- 1 clove garlic, crushed
- 1 - jalapeno, finely chopped
- 2 teaspoons chili powder
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1 tablespoon fresh lemon juice
How To Make slow cooker fajitas

Step 1Cut meat against the grain into 1/2 diagonal strips.

Step 2Place in the slow cooker.

Step 3Top with onions and peppers.

Step 4In a small bowl, combine garlic, jalapenos, chili powder, cumin, salt, oil, and lemon juice.

Step 5Pour mixture over the meat and veggies.

Step 6Cover and cook on low for six to seven hours.

Step 7Serve on warm flour tortillas with sour cream, shredded cheese, and avocado.
