Ingredients

  • 2 lb
    flank or skirt steak, or chicken breast
  • 1
    onion, thinly sliced
  • 1
    red pepper, sliced in strips
  • 1
    green pepper, sliced in strips
  • 1 clove
    garlic, crushed
  • 1
    jalapeno, finely chopped
  • 2 tsp
    chili powder
  • 1/2 tsp
    ground cumin
  • 1/4 tsp
    salt
  • 1/4 c
    vegetable oil
  • 1 Tbsp
    fresh lemon juice

How to Make Slow Cooker Fajitas

Step-by-Step

  1. Cut meat against the grain into 1/2 diagonal strips. Place in slow cooker and top with onions and peppers.
  2. In a small bowl, combine garlic, jalapenos, chili powder, cumin, salt, oil and lemon juice. Pour mixture over the meat and veggies.
  3. Cover and cook on low six to seven hours. Serve on warm flour tortillas with sour cream, shredded cheese and avocado.
