Ingredients

  • 2 cups cooked white rice
  • 1 - green bell pepper chopped
  • 1 - onion chopped
  • 1 cup celery chopped
  • 2 - small cans diced green chilies
  • 3 cans creamstyle corn
  • 2 1/2 cups shredded pepper jack or yellow cheese
  • 1 stick butter or margarine

How To Make rice casserole

  • Step 1
    Saute: celery,onions and bell pepper and green chilies in butter or margarine until tender. Mix cooked white rice saute vegetables, creamstyle corn and 2 cups shredded cheese mix well until well blended. Pour into a casserole baking dish. Bake 45 mins at 350 oven. Five mins before casserole is done sprinkle the rest of shredded cheese continue baking until cheese is melted.
