Ingredients

  • 1 lb
    beef steak, boneless, about 3/4
  • 8 small
    flour tortillas, warmed
  • MARINADE INGREDIENTS

  • 2 Tbsp
    lime juice
  • 2 tsp
    vegetable oil
  • 2
    garlic cloves, crushed
  • PICO DE GALLO INGREDIENTS

  • 1 c
    tomato, seeded, chopped
  • 1/2 c
    zucchini, diced
  • 1/4 c
    fresh cilantro, coarsely chopped
  • 1/4 c
    salsa
  • 1 Tbsp
    lime juice

How to Make Quick Fajitas with Pico De Gallo

Step-by-Step

  1. Place beef steak in plastic bag; add marinade ingredients, turning to coat.
  2. Close bag securely and marinate in refrigerator 20-30 minutes, turning once.
  3. Meanwhile in medium bowl, combine Pico de Gallo ingredients; mix well.
  4. Remove steak from marinade; discard marinade.
  5. Place steak on rack in broiler pan so surface of meat is 2-3 inches from heat.
  6. Broil 9-12 minutes for medium rare doneness, turning occasionally.
  7. Trim fat from steak; carve crosswise into very thin slices.
  8. Serve beef in tortillas with Pico de Gallo.
