Home alone one day and received an invite for dinner at Tom & Kaye Paluch's. Tom served up this casserole and it was delicious. I hounded them for the recipe and made it this week! Dave & Will loved it too. Easy, quick & delicious.

ground beef scrambled
1 can(s)
4oz. green chili's undrained
1 can(s)
15oz. tomato sauce
1 medium
onion, chopped
1 can(s)
8oz. corn or creamed corn
1 can(s)
14oz. black beans, drained & rinsed.
6 small
8" tortillas
3 c
mexican blend shredded cheese
1 tsp
2 tsp
chili powder
1/2 tsp
red pepper flakes
1/2 tsp
1 tsp
garlic, minced

How to Make Quesadilla Casserole


  • 1Scramble meat & onion until cooked. Add all other ingred. & spices except tortilla's & cheese. Bring to a boil, reduce heat to low for 5-10 min. Grease 9x13 casserole dish. Layer burger mix, 3 tortilla's, cheese. Repeat.
  • 2Cook for 15- 20 minutes in 350 degree oven.
