Home alone one day and received an invite for dinner at Tom & Kaye Paluch's. Tom served up this casserole and it was delicious. I hounded them for the recipe and made it this week! Dave & Will loved it too. Easy, quick & delicious.

Ingredients

  • 1 1/4 - ground beef scrambled
  • 1 can 4oz. green chili's undrained
  • 1 can 15oz. tomato sauce
  • 1 medium onion, chopped
  • 1 can 8oz. corn or creamed corn
  • 1 can 14oz. black beans, drained & rinsed.
  • 6 small 8" tortillas
  • 3 cups mexican blend shredded cheese
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon oregano
  • 1 teaspoon garlic, minced

How To Make quesadilla casserole

  • Step 1
    Scramble meat & onion until cooked. Add all other ingred. & spices except tortilla's & cheese. Bring to a boil, reduce heat to low for 5-10 min. Grease 9x13 casserole dish. Layer burger mix, 3 tortilla's, cheese. Repeat.
  • Step 2
    Cook for 15- 20 minutes in 350 degree oven.
