We usually prefer crispy tacos, but once in awhile I make soft tacos and my family enjoys them too. Here's how I make them. Refried beans make great tacos too.

  • Step 1
Shred cooked roast,in a skillet heat oil,add garlic, cook 1 minute add meat cook 2-3 minutes until heated through. In a skillet heat a small amount of oil, add tortillas, cook 30 seconds, turn over ,cook another 30 seconds(you're just cooking the raw flavor from the tortilla) Drain on a brown paper bag. Fill tortillas with meat, add minced onions and cilantro.Top with salsa.
  • Step 2
For Salsa: Char tomatoes and peppers in a dry skillet. Mince garlic and cilantro. When tomatoes and peppers are cool, peel, mince and add garlic and cilantro, mix well, season to taste with salt. I use a mortar but if you don't have one just mince vegetables for salsa.
