my favorite corn chip tamale casserole

I know there are a lot of Frito Casserole recipes out there, but this version is my favorite! Everyone from kids to adults seem to enjoy it, and it is sooo easy!

Ingredients

  • 1 can tamales (prefer hormel's)
  • 1 can chili with beans (prefer dennison's)
  • 1 - 2 - green onions, white and green parts - finely sliced
  • 1 - 2 cups grated cheddar cheese (i use mild)
  • 1 to 1 1/2 cups corn chips (such as fritos)

How To Make my favorite corn chip tamale casserole

  • Step 1
    Remove paper from tamales and place in small baking dish, along with liquid from can. Slice each tamale into 3 - 4 pieces. Sprinkle with half of the chopped green onion.
  • Step 2
    Spread chili with beans over the tamales. Sprinkle with rest of green onions. Sprinkle with plenty of cheese!
  • Step 3
    Put corn chips in a baggie, and with hands or rolling pin, crush and spread over cheese to cover. *You can put the cheese on top of the corn chips, but I like the cheese to melt directly onto the beans.
  • Step 4
    Bake at 350 degrees for 25 minutes, or until heated through. Serve with condiments of your choice - I use sour cream and taco sauce. A great quick and tasty meal!
