My take on stuffed peppers with a flavorful tamale filling, salsa and cheese.

4
bell peppers
1 pkg
xlnt tamales (6 pack in a bag)
1 jar(s)
salsa or picante sauce
8 oz
cheddar cheese, shredded

How to Make Most XLNT Stuffed Peppers

Step-by-Step

  • 1Line 9x13 pan with foil or spray with nonstick spray.
  • 2Wash peppers. Slice in half and take out core with seeds.
  • 3Parboil in boiling water for 5 minutes. Remove with tongs and drain til cool enough to handle.
  • 4Unwrap each tamale and break into large chunks into bowl.
  • 5Place peppers halves in pan, cut side up, and stuff lightly with broken up tamales, using spoon to push into nooks and crannies.
  • 6Using large serving spoon, scoop heaping spoonful of salsa on top of tamale-stuffed pepper halves.
  • 7Grab a handful of shredded cheese and place on top.
  • 8Bake at 350 for 25-30 minutes. Let cool for a few minutes.
  • 9Serves 4 to 8 people, depending on whether someone wants 1 or 2 halves.
    Note - I used only 3 peppers because one had gone bad, but there is enough tamale filling for 4 (8 halves)
