My take on stuffed peppers with a flavorful tamale filling, salsa and cheese.

Ingredients
- 4 - bell peppers
- 1 package xlnt tamales (6 pack in a bag)
- 1 jar salsa or picante sauce
- 8 ounces cheddar cheese, shredded
How To Make most xlnt stuffed peppers

Step 1Line 9x13 pan with foil or spray with nonstick spray.

Step 2Wash peppers. Slice in half and take out core with seeds.

Step 3Parboil in boiling water for 5 minutes. Remove with tongs and drain til cool enough to handle.

Step 4Unwrap each tamale and break into large chunks into bowl.

Step 5Place peppers halves in pan, cut side up, and stuff lightly with broken up tamales, using spoon to push into nooks and crannies.

Step 6Using large serving spoon, scoop heaping spoonful of salsa on top of tamale-stuffed pepper halves.

Step 7Grab a handful of shredded cheese and place on top.

Step 8Bake at 350 for 25-30 minutes. Let cool for a few minutes.

Step 9Serves 4 to 8 people, depending on whether someone wants 1 or 2 halves. Note - I used only 3 peppers because one had gone bad, but there is enough tamale filling for 4 (8 halves)
