How to Make Most XLNT Stuffed Peppers


  1. Line 9x13 pan with foil or spray with nonstick spray.
  2. Wash peppers. Slice in half and take out core with seeds.
  3. Parboil in boiling water for 5 minutes. Remove with tongs and drain til cool enough to handle.
  4. Unwrap each tamale and break into large chunks into bowl.
  5. Place peppers halves in pan, cut side up, and stuff lightly with broken up tamales, using spoon to push into nooks and crannies.
  6. Using large serving spoon, scoop heaping spoonful of salsa on top of tamale-stuffed pepper halves.
  7. Grab a handful of shredded cheese and place on top.
  8. Bake at 350 for 25-30 minutes. Let cool for a few minutes.
  9. Serves 4 to 8 people, depending on whether someone wants 1 or 2 halves.
    Note - I used only 3 peppers because one had gone bad, but there is enough tamale filling for 4 (8 halves)
