My take on stuffed peppers with a flavorful tamale filling, salsa and cheese.

Ingredients

  • 4 - bell peppers
  • 1 package xlnt tamales (6 pack in a bag)
  • 1 jar salsa or picante sauce
  • 8 ounces cheddar cheese, shredded

How To Make most xlnt stuffed peppers

  • Step 1
    Line 9x13 pan with foil or spray with nonstick spray.
  • Step 2
    Wash peppers. Slice in half and take out core with seeds.
  • Step 3
    Parboil in boiling water for 5 minutes. Remove with tongs and drain til cool enough to handle.
  • Step 4
    Unwrap each tamale and break into large chunks into bowl.
  • Step 5
    Place peppers halves in pan, cut side up, and stuff lightly with broken up tamales, using spoon to push into nooks and crannies.
  • Step 6
    Using large serving spoon, scoop heaping spoonful of salsa on top of tamale-stuffed pepper halves.
  • Step 7
    Grab a handful of shredded cheese and place on top.
  • Step 8
    Bake at 350 for 25-30 minutes. Let cool for a few minutes.
  • Step 9
    Serves 4 to 8 people, depending on whether someone wants 1 or 2 halves. Note - I used only 3 peppers because one had gone bad, but there is enough tamale filling for 4 (8 halves)
