A very nice quick and easy meal that pleases everyone from kids to adults.

1/2 lb
ground beef
1/2 small
onion, chopped
2 clove
garlic, minced
salt and pepper to taste
1 Tbsp
(heaping tablespoon) chili powder
1 1/2 tsp
1 tsp
(15 oz) can refried beans
(9-inch) flour tortillas
1/2 c
chunky salsa, or your favorite
green onions, sliced
tomatoes, diced
black olives, sliced
1 c
cheddar cheese, grated

How to Make Mexican Pizza


  • 1Preheat oven to 350 degrees.
  • 2Brown beef, onions and garlic in skillet over medium heat; drain off grease and add salt and pepper to taste.
  • 3Combine chili powder, cumin and paprika; stir into meat mixture.
  • 4Place 1 flour tortilla in the bottom of 2 pie plates; spread refried beans onto each tortilla; top each with 1/2 of the meat mixture and then place another tortilla on each. Place in preheated oven and bake for 10 minutes.
  • 5Remove from oven and top each pizza with 1/2 of the salsa. Garnish with green onions, olives and tomatoes; top each with 1/2 of the shredded cheese.
  • 6Return to oven for about 5 minutes or until cheese has melted; cool slightly.

    Slice each pizza into quarters and serve.
