A very nice quick and easy meal that pleases everyone from kids to adults. Adapted from "What2Cook" blog http://what2cook.net/2013/05/02/mexican-pizza-2/

Ingredients

  • 1/2 pound ground beef
  • 1/2 small onion, chopped
  • 2 cloves garlic, minced
  • - salt and pepper to taste
  • 1 tablespoon (heaping tablespoon) chili powder
  • 1 1/2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 - (15 oz) can refried beans
  • 4 - (9-inch) flour tortillas
  • 1/2 cup chunky salsa, or your favorite
  • - green onions, sliced
  • - tomatoes, diced
  • - black olives, sliced
  • 1 cup cheddar cheese, grated

How To Make mexican pizza

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Brown beef, onions and garlic in skillet over medium heat; drain off grease and add salt and pepper to taste.
  • Step 3
    Combine chili powder, cumin and paprika; stir into meat mixture.
  • Step 4
    Place 1 flour tortilla in the bottom of 2 pie plates; spread refried beans onto each tortilla; top each with 1/2 of the meat mixture and then place another tortilla on each. Place in preheated oven and bake for 10 minutes.
  • Step 5
    Remove from oven and top each pizza with 1/2 of the salsa. Garnish with green onions, olives and tomatoes; top each with 1/2 of the shredded cheese.
  • Step 6
    Return to oven for about 5 minutes or until cheese has melted; cool slightly. Slice each pizza into quarters and serve.
