I created this last night and it was praised by my husband and I really liked it too. Just love when we create and it turns out good. Hope you will give it a try.

Ingredients

  • 1 pound ground turkey or beef
  • 1 package taco seasoning mix
  • 1 can kidney beans, canned and rinsed
  • 1 can whole kernal corn, undrained
  • 1 jar small, medium salsa
  • 1/4 cup queso, medium
  • 1 large pkg of small soft tortillas
  • 4 cups mexican blend shredded cheese

How To Make mexican ole'

  • Step 1
    In a skillet, brown turkey. In a large glass bowl add the next 5 ingredients listed. Mix well in bowl adding 3 cups of cheese. It will be a bit soupy, but that is ok. In a 9x13 baking dish spray with cooking spray.
  • Step 2
    Place tortillas to cover the bottom, tearing them to fit. Pour 1/2 the mixture on top. Repeat and end up with tortillas on top. Add the rest of the cheese on top. Bake at 350F for 45 minutes covered with foil. When done, let set for 15 minutes.
  • Step 3
    ****serving suggestions-toppings**** sour cream, spinach, lettuce, diced tomatoes, black olives, jalapenos, or any thing else you would like.
