Ingredients
- 6 - poblano's
- 1/2 pound ground beef
- 2 - hot links
- 1/2 cup instant brown rice
- 1 cup fresh or frozen corn
- 1 large tomato
- 1 small jalapeno
- 1/2 cup onion
- 1 teaspoon cumin
- 1 teaspoon ancho chili powder
- 1 teaspoon granulated garlic
- 1- 1/2 cups cheese
- 2 tablespoons cilantro, fresh, chopped
How To Make mexican inspired stuffed poblano

Step 1Cut a V shape into pepper and remove seeds.

Step 2Dice tomato, onion, cilantro and jalapeno. Remove corn from cob if using fresh.

Step 3Chop hot links into small pcs.

Step 4In a large bowl mix together all ingredients using only 1/2 c of cheese, save remaining cheese for topping.

Step 5Place meat into pepper and gently but firmly press down into sides. Bake at 350° for about 30 min. Remove and place remaining cheese on top, bake another 20-30 min.
