  • 1/2 lb
    ground beef
  • 2
    hot links
  • 1/2 c
    instant brown rice
  • 1 c
    fresh or frozen corn
  • 1 large
  • 1 small
  • 1/2 c
  • 1 tsp
  • 1 tsp
    ancho chili powder
  • 1 tsp
    granulated garlic
  • 1- 1/2 c
  • 2 Tbsp
    cilantro, fresh, chopped

How to Make Mexican Inspired Stuffed Poblano


  1. Cut a V shape into pepper and remove seeds.
  2. Dice tomato, onion, cilantro and jalapeno. Remove corn from cob if using fresh.
  3. Chop hot links into small pcs.
  4. In a large bowl mix together all ingredients using only 1/2 c of cheese, save remaining cheese for topping.
  5. Place meat into pepper and gently but firmly press down into sides. Bake at 350° for about 30 min. Remove and place remaining cheese on top, bake another 20-30 min.
