My kids just loves this dish, they are asking for it nearly every week. It is a recipe that was handed down from my mother.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 stick butter
  • - jalapeno peppers, diced, to your taste
  • 1 box jiffy cornbread mix
  • 1 can creamed style corn
  • 1 - egg
  • 1/2 cup milk
  • 12 slices kraft single sliced cheese

How To Make mexican cornbread

  • Step 1
    In a skillet brown ground beef, add 1 stick of butter, onions, and jalapeno peppers cook onions til just tender.
  • Step 2
    While ground beef mixture is cooking, mix egg, milk creamed of corn and cornbread mix together.
  • Step 3
    In a 13 x 9 baking pan put half of the cornbread mixture on bottom of pan then add the ground beef mixture. On top of the ground beef put your cheese then top it off with the remaining cornbread mixture. Cook about 30 minutes at 350 or until golden brown on top.
