mexican cornbread dish
Another family favorite! I taught at a preschool where they served this; however, I added my own spin on it to make it even better.

Ingredients
- 2 boxes cornbread mix (make as directed)
- 1 1/2 pounds hamburger, browned & drained
- 1 package taco seasoning mix (make as directed)
- 1 1/2 - tomatoes, sliced & diced
- 1 package mexican blend shredded cheese
- - sour cream
- - salsa, chunky
How To Make mexican cornbread dish

Step 1Make cornbread as directed on box & place in a baking dish. Cook until almost done.

Step 2Remove from oven & spoon seasoned hamburger all over cornbread. Then top with cheese.

Step 3Place back into oven for remaining amount of cooking cornbread; as well as, melting cheese (usually about another 5-10 minutes).

Step 4Remove from oven & top with tomatoes. Add sour cream & salsa if you wish.
