Another family favorite! I taught at a preschool where they served this; however, I added my own spin on it to make it even better.

Ingredients For mexican cornbread dish

  • 2 box
    cornbread mix (make as directed)
  • 1 1/2 lb
    hamburger, browned & drained
  • 1 pkg
    taco seasoning mix (make as directed)
  • 1 1/2
    tomatoes, sliced & diced
  • 1 pkg
    mexican blend shredded cheese
  • sour cream
  • salsa, chunky

How To Make mexican cornbread dish

  • 1
    Make cornbread as directed on box & place in a baking dish. Cook until almost done.

    Remove from oven & spoon seasoned hamburger all over cornbread. Then top with cheese.

    Place back into oven for remaining amount of cooking cornbread; as well as, melting cheese (usually about another 5-10 minutes).

    Remove from oven & top with tomatoes. Add sour cream & salsa if you wish.
