  • 1 cup chopped peeled jicama
  • 1/2 cup cucumber , peeled, seeded, chopped
  • 1 medium red onion, chopped
  • 1/2 cup red bell pepper
  • 1/4 cup finely chopped fresh cilantro
  • 1/2 - jalapeno pepper, seeded and chopped
  • 1 cup black beans, canned
