  • 1 pkg
    tortilla chips
  • 2 lb
    ground beef
  • 1 medium
    onion, chopped
  • 1/2 box
    velveeta, cubed
  • 8 oz
    mexican blend shredded cheese
  • 1 large
    can enchilada sauce
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of mushroom soup

How to Make mexican casserole


  1. brown ground beef with onion. Drain.
  2. Add enchilada sauce and soups
  3. spoon a small amount into bottom of casserole dish. Put a layer of chips on top. A layer of beef mixture, then velvetta. Repeat layers til casserole is full. Top with shredded cheese.
  4. Bake at 425' til cheese is melted and bubbly
