This recipe was given to me by my wife's aunt Sylvia (after 6 years of begging) and is not as labor intensive as some recipes but the flavor is fantastic.

15 lbhoneycomb trip (washed, trimmed of fat, cut into 1 1/2 inch pieces and washed again)
1 galyellow hominy
2 bottlegebhardt menudo spice
3 Tbspgarlic powder
2 Tbspground cumin
How to Make Menudo
- Place cleaned Tripe in roaster and fill with water to cover. Add all spices. Cook at 400 for about 4 hours stirring every hour or so. Add more water if necessary.
- Drain hominy and add to menudo and cook for an additional hour.
- Serve with diced jalapenos, diced onion, chopped cilantro, lime wedges, crushed dried oregano and corn or flour tortillas.
