Menudo is a classic mexican soup fabled as a weapon used to battle "Montezuma's Revenge". It is very popular in Mexico making Mexico a significant export market for beef stomach from the US and Canada.

This recipe was given to me by my wife's aunt Sylvia (after 6 years of begging) and is not as labor intensive as some recipes but the flavor is fantastic.

  • 15 lb
    honeycomb trip (washed, trimmed of fat, cut into 1 1/2 inch pieces and washed again)
  • 1 gal
    yellow hominy
  • 2 bottle
    gebhardt menudo spice
  • 1/4 c
  • 3 Tbsp
    garlic powder
  • 2 Tbsp
    ground cumin

How to Make Menudo


  1. Place cleaned Tripe in roaster and fill with water to cover. Add all spices. Cook at 400 for about 4 hours stirring every hour or so. Add more water if necessary.
  2. Drain hominy and add to menudo and cook for an additional hour.
  3. Serve with diced jalapenos, diced onion, chopped cilantro, lime wedges, crushed dried oregano and corn or flour tortillas.
