My mom made this when we were growing up. When I started making them for my family, my daughter, Megan, loved them. Especially because of the crunchy corn tortilla bits. My daughter's friends call her Meggie and when she began making this for them they loved them too!

eggs

corn tortillas
-
(opt) onions, grn. peppers, jalapenos, whatever you like

any kind of (cubed) meat

cheese (opt)

salt and pepper
How To Make meggies migas

1Figure on 2 eggs & 1 corn tortilla per person

2Tear up or cut up tortillas into small pieces. Fry until crisp. Set aside.

3Brown other pieces.

4Add tortillas, eggs, salt & pepper and cheese. Scramble as eggs are cooking. Do not overcook.

5Serve w/buttered toast.
