machaca con huevos
Since A friend of mine introduced me to this yummy goodness called Machaca I am obessed with using in all different ways. This is the latest way I cooked it. It is meant for breakfast but it is so hearty it can be eaten any time.This can be eaten alone or rolled up in a flour tortilla.I will post a link to my Machaca.

Ingredients
- 6 - eggs
- 3/4--1 cup machaca
- 1 medium red bell pepper..chopped
- 1 medium onion ..chopped
- 1 clove garlic..minced
- 1 tablespoon olive oil
- 1 cup cheddar cheese, shredded
- - salt and pepper to taste
- 1/4 teaspoon chipolte chili pepper
- - splash of milk
How To Make machaca con huevos

Step 1In a skillet saulte bell pepper, onion, garlic//until onion is clear.

Step 2In a mixing bowl scramble eggs with a splash of milk. Add salt and pepper and chipolte pepper. Add meat.

Step 3Pour egg mixture in skillet and cook like scrambled eggs until the eggs are cooked.

Step 4Add cheese ..turn off fire..cover and let cheese melt.
