machaca con huevos

Since A friend of mine introduced me to this yummy goodness called Machaca I am obessed with using in all different ways. This is the latest way I cooked it. It is meant for breakfast but it is so hearty it can be eaten any time.This can be eaten alone or rolled up in a flour tortilla.I will post a link to my Machaca.

Ingredients

  • 6 - eggs
  • 3/4--1 cup machaca
  • 1 medium red bell pepper..chopped
  • 1 medium onion ..chopped
  • 1 clove garlic..minced
  • 1 tablespoon olive oil
  • 1 cup cheddar cheese, shredded
  • - salt and pepper to taste
  • 1/4 teaspoon chipolte chili pepper
  • - splash of milk

How To Make machaca con huevos

  • Step 1
    In a skillet saulte bell pepper, onion, garlic//until onion is clear.
  • Step 2
    In a mixing bowl scramble eggs with a splash of milk. Add salt and pepper and chipolte pepper. Add meat.
  • Step 3
    Pour egg mixture in skillet and cook like scrambled eggs until the eggs are cooked.
  • Step 4
    Add cheese ..turn off fire..cover and let cheese melt.
