Ingredients

  • 12 - corn tortillas
  • 1 - onion, chopped
  • 2 cups tomatoes, diced
  • 2 cups salsa
  • - cumin
  • 1 - jalapeno pepper, seeded, finely chopped
  • 3 - garlic cloves, minced
  • 27 ounces green chiles
  • 12 ounces tofu, firm mashed
  • 32 ounces non-fat yogurt
  • 1 tablespoon dry no-oil vinaigrette
  • - salad dressing
  • - cilantro, fresh and chopped

How To Make lydia's mexican casserole

  • Step 1
    Preheat oven to 350.
  • Step 2
    Using nonstick baking dish, line casserole with six tortillas.
  • Step 3
    Mix together onion, tomatoes, salsa, 1 teaspoon cumin, chopped jalapeno and garlic.
  • Step 4
    Pour about 3/4 of mixture into casserole.
  • Step 5
    Lay whole green chile peppers flat over this, then mashed tofu.
  • Step 6
    Cover with remainder of tortillas.
  • Step 7
    Add remaining chopped tomato and salsa mixture.
  • Step 8
    Mix yogurt with dry salad dressing mix and pour over chopped tomato and salsa.
  • Step 9
    Sprinkle a little ground cumin over this and bake for 35-45 minutes.
  • Step 10
    Garnish with cilantro.
  • Step 11
    Variation: Substitute cooked beans for the tofu.
