This is great for a crowd if you debone the chicken it goes a long way,and it is so easy everyone thinks you've been working for hours. I have even used frozen chicken piece's when I had unexpected company come over.Hope ya'll enjoy.

    chicken pieces
  • 3 can(s)
    diced tomatoes
  • 1 c
    salsa, chunky (mild,med,or hot) your choice
  • 1 1/2 tsp
  • 1 1/2 tsp
    tony's seasoning
  • 1 tsp
    italian seasoning
  • 3
    chicken bouillon cubes
  • 1 large
    onion cut in strips
  • 1
    bell pepper cut in strips

How to Make Linda's Spanish Chicken & Rice


  1. Put chicken pieces in a large pot,add tomatoes,salsa,chicken bouillon cubes,onion,bell pepper,an all seasoning. DO NOT ADD ANY WATER OR SALT.Cook 1 1/2 hrs. until chicken is done. You can serve over your favrite rice.Leave it on the bone or debone it what ever works best for you. DO NOT COVER POT WHEN COOKING.
