I make these when my roommates and I are up late and don't feel like doing too much with food. This is simple and not too expensive, plus it's really tasty.

These should be called anytime nachos because you're going to want these all the time! The star is the layers of savory beans, taco meat, nacho cheese and shredded cheese. Once baked, it's ooey gooey deliciousness. Serve over your favorite tortilla chips with your favorite toppings and you have fantastic nachos.

Ingredients For late night nachos

  • CHEESE/MEAT MIXTURE
  • 1 can
    spicy refried beans, 16 oz.
  • 1 can
    regular refried beans, 16 oz.
  • 1 can
    meaty chili, 15 oz.
  • 1 lb
    ground beef
  • 1 pkg
    taco seasoning mix
  • 1-2 c
    cheese (of your choice, I use cheddar and pepper jack)
  • 1 jar
    nacho cheese dipping sauce, 15 oz.
  • TOPPINGS
  • bag of tortilla chips of your choice
  • 2 c
    lettuce, chopped
  • 1 lg
    onion, chopped
  • 1-2
    tomatoes, diced
  • 1 can
    sliced olives
  • sour cream
  • salsa
  • anything else that sounds good

How To Make late night nachos

  • 1
    Preheat oven to 350* F.
  • Browning ground beef in a saucepan.

    Prepare ground beef with taco seasoning. (I like to add a little onion, and jalapeno, but it's not necessary).
  • Chili and beans combined in a bowl.

    In a bowl, combine chili and the two cans of beans.
  • Spreading meat mixture into a baking dish.

    In a large glass pan spread out bean mixture.
  • Browned meat added to baking dish.

    Top with the browned meat.
  • Nacho cheese sauce added on top of ground beef.

    On top of meat and bean layers, glop on and spread out the nacho cheese.
  • Shredded cheese added to baking dish.

    Then add a shredded cheese layer.
  • Baked cheese dip in a baking dish.

    Place in oven and bake for 15-30 minutes. Until cheese is bubbly.

    Remove from oven and serve over chips. Family can add as many or as few toppings as they choose.
