    olive oil

    onions, finely chopped

    bell pepper, yellow, red or green, finely chopped

    garlic, minced
  • 1 can(s)
    unsweetened tomato sauce, 16 ounces
  • 1 can(s)
    pinto beans rinsed and drained
  • 1
    ear corn, kernels cut off
  • 1 tsp
    chili powder
  • 1 tsp
    cumin
  • 1/2 tsp
    sea salt
  • dash(es)
    cayenne pepper
  • 3 c
    water
  • 1 c
    yellow cornmeal
  • 1 Tbsp
    lemon juice
  • 1 tsp
    dijon mustard
  • 1/2 tsp
    sea salt

How to Make Hot Tamale Pie

Step-by-Step

  1. Heat the olive oil in a large frying pan over medium-high heat.
  2. Add the onion bell pepper, and garlic and cook until softened. 6 to 8 minutes
  3. Remove from the heat and stir in the tomato sauce, pinto beans, corn, chili powder, cumin, salt and cayenne.
  4. Pour into an 8 x 8 glass baking dish.
  5. Preheat the oven to 350 degrees.
  6. Boil the water add the cornmeal, lemon juice, mustard, and salt in a large saucepan, and stir until mixed.
  7. Bring to a boil over medium-high heat, then immediately reduce the heat to low and simmer, stirring often, until thickened, 4 to 5 minutes.
  8. Spread the cooked cornmeal over the bean mixture.
  9. Bake for 30 minutes.
  10. Cool for 10 minutes before serving.
