This is a quick and comfort food catagory for as easy casserole that everyone has loved everytime I have made it.

  • 1 lb
    ground lean beef
  • 1/2 c
    onion, chopped
  • 1 tsp
    red chili powder
  • 1 pkg
    corn tortillas
  • 1 pkg
    cheddar cheese, shredded
  • 1 can(s)
    cream of mushroom soup
  • 1 can(s)
  • 1 can(s)
    4 oz. can chopped green chili

How to Make Green Chili Enchilada Casserole


  1. Brown lean ground beef
    Add chopped onion and cook with beef till meat is well browned.
    Add chili powder. ( If you like very spicy, add more to taste)
  2. Spray a 8X8 square dish. Quarter each corn tortilla and layer in bottom of dish to cover. Add meat mixture to cover. Add 1 4 oz. can chopped green chili over all. Spread cheese to cover. Add another layer of corn tortillas, meat mixture and green chili. Top with more tortillas and top with cheese. Pour soup diluted with milk over top of casserole to cover all.
  3. Bake in a 350 degree oven for 40 minutes or till heated through.
    SPECIAL NOTE: Can make only one layer if desired. If making a larger casserole double meat. Will also freeze well.
