green chicken enchiladas

My family loves Mexican food,this recipe was given to me by a good friend and I make it often. This recipe works well with leftover roasted chicken or turkey.

Ingredients

  • 1/2 cup chopped onion
  • 2 cloves garlic,crushed
  • 2 cups cooked chicken
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 - (10 oz) green enchilada sauce
  • 8 - corn tortillas
  • 1 cup jack cheese,shredded
  • 1 cup thick tomato salsa
  • 1 teaspoon fresh cilantro,chopped
  • - sour cream

How To Make green chicken enchiladas

  • Step 1
    Preheat oven to 350 F. In a large skillet,saute onion and garlic over medium heat 8-10 minutes.Add chicken, season with salt and pepper to taste. Stir in ½ cup enchilada sauce. Set aside. Pour the second can of enchilada sauce into a shallow dish. Heat oil in small skillet until begins to smoke add tortillas one at a time 15 seconds,just until soft,turn over cook another 15 seconds.Dip tortillas, one at a time, into sauce to coat both sides. Spoon chicken mixture evenly down the center of each tortilla and roll up. Place seam-side down in a 13x9-inch baking dish.Spoon salsa over enchiladas. Spoon reserved enchilada sauce over enchiladas. Bake uncovered for 15 minutes . Sprinkle with the cheese ,let sit until cheese melts,sprinkle liberally with cilantro. Serve with sour cream .
