Ingredients

  • 12 - corn tortillas
  • 4 ounces chopped olives
  • 28 ounces enchilada sauce
  • 8 ounces tomato sauce
  • 1 - onion, chopped
  • 1 pound ground beef
  • 1 pound cheddar cheese

How To Make grammy's enchiladas

  • Step 1
    Brown onion and beef together; drain fat.
  • Step 2
    Add olives.
  • Step 3
    While cooking meat, pour sauces into large pan and heat well.
  • Step 4
    Dip 1 tortilla into sauce, fill with meat and cheese, roll up, and lay folded side down in baking pan.
  • Step 5
    Continue with all tortillas.
  • Step 6
    Sprinkle top with leftover meat and cheese and sauce.
  • Step 7
    Bake covered in 350 oven for 30-40 minutes.
  • Step 8
    Uncover and bake 15 minutes more.
