  • 1 -1 1*2 lb
    ground meat (your choice)
  • 2 pkg
    chicken rice (knorr is what i use . flavor is spot on)
  • 1 can(s)
    rotel tomatoes ( i use green chili thou some like it hotter )
  • 1 jar(s)
    ragu cheese sauce ( by the spaghetti sauces in the store. its the orange one)
  • 1 jar(s)
  • 1 pkg
    taco seasoning

How to Make Fiesta Casserole


  1. cook rice as directed on packages
    Brown meat and add taco spice. (I make my own with coriander, cumin, garlic ,onion chili pepper, pepper , salt, ) Pre pack is fine
    add rotel tomatoes .. simmer for 4 minutes
  2. spread rice in 9 x 13 dish. top with meat. top with salsa ( any is fine My kids tend to like it with the peach or the sweeter type salsa as the rotel toms have a bite.. )
    top with ragu cheese sauce
  3. bake for 30 minutes at 350. Pull from oven and allow to rest for at least `15 minutes , Get your chips and DIG IN!
