My family loves this recipe and it usually makes enough filling that we can make burritos or enchiladas with the leftovers. It's low-fat and high fiber, too, but I don't mention that to the kids.

You can reduce the simmer time, but cooking it about 40 minutes develops the flavor.

    lowfat hamburger meat
  • 1
    chopped onion
  • 1/2
    chopped bell pepper
  • 1 or 2 can(s)
    diced tomatoes
  • 1 can(s)
    black beans
  • 1 can(s)
    red kidney beans
  • 1 c
    corn, frozen or canned
  • 1 1/2 c
    water, as needed
  • 1 or 2 Tbsp
    chili powder
  • 2 tsp
  • 1/2 tsp
  • 1 tsp
    garlic powder
  • 1/4 tsp

How to Make Family Tacos


  1. Brown hamburger meat in a nonstick skillet.
  2. Drain hamburger meat; set aside.
  3. Saute onions and pepper for a few minutes.
  4. Add meat back to skillet, along with both cans of rinsed beans, drained corn, and tomatoes. Add water as needed.
  5. Add salt and spices to skillet. Bring to a simmer, then reduce heat to medium low. Cook for 40 minutes or so. Adjust seasoning if necessary.
  6. Serve with taco shells, shredded cheese, sour cream, and diced tomatoes and lettuce. Feel free to add your favorite hot sauce, salsa, or guacamole if desired.
