My family loves this recipe and it usually makes enough filling that we can make burritos or enchiladas with the leftovers. It's low-fat and high fiber, too, but I don't mention that to the kids. You can reduce the simmer time, but cooking it about 40 minutes develops the flavor.

Ingredients
- 1 pound lowfat hamburger meat
- 1 - chopped onion
- 1/2 - chopped bell pepper
- 1 or 2 cans diced tomatoes
- 1 can black beans
- 1 can red kidney beans
- 1 cup corn, frozen or canned
- 1 1/2 cups water, as needed
- 1 or 2 tablespoons chili powder
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 1/4 teaspoon cumin
How To Make family tacos

Step 1Brown hamburger meat in a nonstick skillet.

Step 2Drain hamburger meat; set aside.

Step 3Saute onions and pepper for a few minutes.

Step 4Add meat back to skillet, along with both cans of rinsed beans, drained corn, and tomatoes. Add water as needed.

Step 5Add salt and spices to skillet. Bring to a simmer, then reduce heat to medium low. Cook for 40 minutes or so. Adjust seasoning if necessary.

Step 6Serve with taco shells, shredded cheese, sour cream, and diced tomatoes and lettuce. Feel free to add your favorite hot sauce, salsa, or guacamole if desired.
