enchiladas casserole style
My daddy made some of the best darned enchiladas. This is his recipe, give or take. Instead of using a cookie sheet and doing layers of three corn tortillas, we will use a deep dish pan, plenty of corn tortillas, and my homemade enchilada sauce, also on this site. This is sooo good! You can also use your favorite enchilada sauce in place of mine. I am sure you will enjoy this. I have, virtually all my life, but as plain enchiladas.

All the flavors of beef enchiladas in a delicious casserole. No rolling required. This casserole is packed with layers of ground beef, tortillas, cheese, and enchilada sauce. The enchilada sauce gives the easy casserole its enchilada flavor and prevents it from being dry. We served this enchilada casserole with Spanish rice and corn for a great weeknight meal.
Ingredients
- 2 pounds ground beef
- 1 - 2 medium onions, diced
- 8 ounces Fiesta blend shredded cheese, can use Monterey Jack or cheddar
- 18 corn tortillas
- 1 - 2 cloves garlic, minced
- 3 cans enchilada sauce
How To Make enchiladas casserole style

Step 1Brown the hamburger in a pan with the garlic, salt, pepper, and some of the onion.

Step 2Drain off the grease and set aside.

Step 3Preheat oven to 350 degrees. Grease a 9x13 baking dish and spread 1/3 of a can of enchilada sauce on the bottom of the dish.

Step 4Layer 6 corn tortillas over the sauce, then spread 1/3 of the sauce over the top of the tortillas.

Step 5Then layer 1/3 of the meat and cheese on top of the tortillas, then top that with the remaining sauce in the can.

Step 6Then repeat the layers; you will have a total of 3 layers.

Step 7Ending with the meat, cheese, and the last of the sauce.

Step 8Bake in the preheated oven for 30 minutes or until bubbling.
