Ingredients For enchilada suprise

  • 1 lb
    ground beef
  • 1/2 c
    chopped onions
  • 1 can
    cream of mushroom soup ( 10 3/4 oz.)
  • 1 can
    enchilada sauce (10 oz.)
  • 1/3 c
    milk
  • 2 tsp
    chopped jalapeno peppers
  • 1 dozen
    corn tortillas
  • 2 1/2 c
    grated cheese (cheddar & jack are best)
  • 1/2 c
    ripe olives, chopped
  • cooking oil for frying tortillas

How To Make enchilada suprise

  • 1
    Brown meat and onions, drain.
  • 2
    Stir in soup, enchilada sauce, milk, chopped peppers.
  • 3
    Reduce heat and simmer.
  • 4
    Heat each tortilla in oil, drain.
  • 5
    Wrap cheese and olives in tortilla. Place on top of meat mixture, cover and heat until cheese melts
