Well, I didn't have a can of enchilada sauce so I had to make my own!! It turned out VERY tasty!!!! It was perfect with the tamale pie I made with it!!!

Ingredients

  • 2 tablespoons canola oil
  • 2 tablespoons flour
  • 2 tablespoons chili powder
  • 1/2 tablespoon cumin
  • 1/4 teaspoon ground cayenne
  • 1 15 ounce cans tomato sauce
  • 1 tablespoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 3/4 cup chicken stock (canned or box)

How To Make enchilada sauce

  • Step 1
    Heat oil in skillet, add flour and stir over medium heat until flour just starts to brown and smells nutty.
  • Step 2
    Add tomato sauce and stir.
  • Step 3
    Mix in all of the spices.
  • Step 4
    Add chicken stock to sauce to thin to desired thickness and heat on low for 20 minutes, stirring frequently.
  • Step 5
    Add more chicken stock as needed for consistency. Use for whatever recipe you would like!
