Ingredients
- - 12-14 small flour tortillas
- - 1/2 lb ground beef/ i use ground turkey, seasoned browned and drained
- - 1 can black beans, drained
- - 1 jar salsa ( i used mild)
- - 1 medium onion, chopped
- - 1 can enchilada sauce ( i used mild )
- - 2 cups sheredded cheese ( i used colby jack blend )
- - salt and pepper,onion powder,garlic powder,chile powder to taste
- - non-stick spray
How To Make * enchilada casserole * in the crock pot *

Step 1spray the crock pot liner with non-stick spray

Step 2Brown the ground beef/ or ground turkey with salt,pepper,onion powder,garlic powder & chili powder

Step 3line the bottom of the crock pot with the flour tortillas. ( You may need to cut some in half ) I used 3 1/2 per layer

Step 4Next spread 1/3 of your meat,1/3 of the black beans,1/3 of the onion, 1/3 of the salsa, 1/3 of enchilada sauce & 1/4 of the shredded cheese over the bottom layer of tortillas

Step 5Now make 2 more layers just like you just did!! Just reserve a tiny bit of Enchilada sauce for top layer!!

Step 6lastly, place one last of tortillas on top that with the last bit of enchilada sauce and cheese

Step 7cook on LOW for 4-6 hrs or on HIGH for 2 hrs
