An easy version of the classic enchilada and yummy as well!

1 lb
ground turkey
1 small
1 1/2 tsp
minced garlic
2 c
16 oz
canned refried beans
10 oz
enchilada sauce
2 1/4 oz
sliced ripe olives
10 (6 in.)
corn tortillas, cut in half
2 c
shredded casserole cheese

How to Make Enchilada Casserole


  • 1Cook turkey, onion and garlic in a large skillet until meat is brown; drain.
  • 2Stir in salsa, beans, enchilada sauce and olives. Bring to a boil. Reduce heat to low; cook, stirring frequently for 5 to 6 minutes.
  • 3Layer half of the corn tortillas on the bottom of a greased 9x13-inch baking dish.
  • 4Cover with half of the meat mixture, sprinkle with one cup of cheese. Repeat layers and top with remaining cup of cheese.
  • 5Cover and bake for 20 minutes; remove cover and bake for an additional 5 minutes.
  • 6Garnish with green onions before serving, if desired.

    Refrigerate any leftovers
