Ingredients

  • 1 pound ground beef
  • 1 - onion, finely chopped
  • 1 can cream of mushroom soup
  • 1 can tomatoes and chiles
  • 12 - corn tortillas
  • 12 ounces cheddar cheese, grated

How To Make enchilada casserole

  • Step 1
    Brown ground beef and onion; drain off grease.
  • Step 2
    Set aside.
  • Step 3
    Mix mushroom soup and tomatoes in blender.
  • Step 4
    Add to ground beef.
  • Step 5
    In a greased 9x13 inch casserole dish, layer 5 to 6 tortillas, torn into bite size pieces, half the ground beef mixture and 1/2 the grated cheese.
  • Step 6
    Repeat layers; ending with cheese.
  • Step 7
    Bake at 350 degrees for 30 minutes.
