enchilada casserole

I got this recipe from a co-worker who said it was so good and easy to make and she was right! Very tasty and even better the next day.

Ingredients

  • 1 pound ground beef, browned and drained
  • 2 cans cream of chicken soup
  • 6 ounces evaporated milk (do not substitute)
  • 1 can enchilada sauce
  • 1 - 2 cups grated cheddar cheese
  • 1/2 package tostito chips
  • 1 small can green chilies (optional)

How To Make enchilada casserole

  • Step 1
    In a 9 x 13" pan, layer the Tostitos on the bottom. Mix ground beef, soup, evaporated milk, green chilies and enchilada sauce together and cook until bubbly. Pour over Tostito chips. Sprinkle grated cheddar cheese over the top. Bake at 350 degrees for 15 - 20 minutes until bubbly. ENJOY!!
  • Step 2
    I add the green chilies and it does not make this casserole too spicey as we don't like real spicey food. Just an added flavor but it can be omitted.
