I am Mexican and everyone loves my Mom's Enchilada's but burning your fingers would somehow end up in the process so I figured that if I just threw it altogether in a large pot, same great taste and a happier cook! I also have my Mom's Spanish Rice recipe that is included in this one! Enjoy!

Ingredients

  • 1 lb
    ground beef
  • 1/2
    chopped onion
  • 4 - 6
    corn tortillas
  • ·
    garlic powder, to taste
  • ·
    cumin, to taste
  • ·
    black pepper, to taste
  • ·
    salt, to taste
  • ·
    flour
  • ·
    water
  • ·
    spanish rice (cooked)
  • ·
    beans (pinto or other)
  • ·
    colby/jack cheese
  • ·
    salsa (optional)

How to Make Enchilada Casserole

Step-by-Step

  1. In a large pot, cook onion til soft. Brown and season ground beef. Do not drain. Add enough flour to coat it well and then add enough water to make a nice gravy. Re-season again.
  2. Tear up or cut up the corn tortillas and add along w/your beans & cheese if you like. You can also add Spanish Rice and/or salsa!
