enchilada casserole

I am Mexican and everyone loves my Mom's Enchilada's but burning your fingers would somehow end up in the process so I figured that if I just threw it altogether in a large pot, same great taste and a happier cook! I also have my Mom's Spanish Rice recipe that is included in this one! Enjoy!

Ingredients

  • 1 pound ground beef
  • 1/2 - chopped onion
  • 4 - 6 - corn tortillas
  • - garlic powder, to taste
  • - cumin, to taste
  • - black pepper, to taste
  • - salt, to taste
  • - flour
  • - water
  • - spanish rice (cooked)
  • - beans (pinto or other)
  • - colby/jack cheese
  • - salsa (optional)

How To Make enchilada casserole

  • Step 1
    In a large pot, cook onion til soft. Brown and season ground beef. Do not drain. Add enough flour to coat it well and then add enough water to make a nice gravy. Re-season again.
  • Step 2
    Tear up or cut up the corn tortillas and add along w/your beans & cheese if you like. You can also add Spanish Rice and/or salsa!
