I am Mexican and everyone loves my Mom's Enchilada's but burning your fingers would somehow end up in the process so I figured that if I just threw it altogether in a large pot, same great taste and a happier cook! I also have my Mom's Spanish Rice recipe that is included in this one! Enjoy!

Ingredients
- 1 pound ground beef
- 1/2 - chopped onion
- 4 - 6 - corn tortillas
- - garlic powder, to taste
- - cumin, to taste
- - black pepper, to taste
- - salt, to taste
- - flour
- - water
- - spanish rice (cooked)
- - beans (pinto or other)
- - colby/jack cheese
- - salsa (optional)
How To Make enchilada casserole

Step 1In a large pot, cook onion til soft. Brown and season ground beef. Do not drain. Add enough flour to coat it well and then add enough water to make a nice gravy. Re-season again.

Step 2Tear up or cut up the corn tortillas and add along w/your beans & cheese if you like. You can also add Spanish Rice and/or salsa!
