enchilada casserole
Well this came from a friend at work. We were talking about Mexican food and I told him that I really like Enchiladas but it took so much time to make them. Well he told me about what his Grandmother did after she got older and the family got bigger. Well as time went by she was getting tired of all the work to make enchiladas so she started to make a Casserole instead of individual enchiladas and so he passed this on to me about 10 years ago. Mighty good I say. Very traditional taste with less work.

Ingredients
- 2 pounds lean hamburger
- 6 15oz cans enchilada sauce green or red
- 1 package corn tortillas ( it takes 24 tortillas )
- 2 lg packages mixed vegetables with carrots , frozen
- 1lg package mexican blend shredded cheese
- - chili seasoning to taste to hambuger
How To Make enchilada casserole

Step 1Brown hamburger and drain off excess fat and water. Add chili seasoning to taste to hamburger.

Step 2Coat each corn tortilla with enchilada sauce Start With a layer of tortillas on bottom of 9 x 13 baking pan. It takes 6 tortillas each layer

Step 3Add Layer of hamburger Add Layer of mixed vegetables Add Layer of cheese.

Step 4Repeat steps 2 and 3 two more times. Then add one more layer of coated tortillas. Left over sauce can be poured over top

Step 5Preheat oven at 275 degrees, bake in oven for 45 min or until good and hot

Step 6Garnish with cheese and/or however you like on your enchiladas. Enjoy
