    cooked white or brown rice

    black beans rinsed and drained

    niblets corn

    shredded cheese, divided

    lowfat sour cream

    black olives

    small to medium red onion chopped
  • 1 can(s)
    sliced jalapeno peppers, not pickled
  • 1 can(s)
  • *
    or 1 28 oz can tomates, + small chopped onion, +jalapeno's to taste, +1 tsp onion salt,+ 1/2 tsp cumin, +pinch of sugar,and chopped hot peppers, 1 -3tbs,... instead of the rotel and salsa

How to Make Easy Spicy black beans and Rice casserole


  1. In a large bowl, mix rice, beans corn, rotel, salsa, sour cream and 1 cup of cheese. (I added Tobasco sauce, about 3 shakes, was Very spicy, like WE like it.)
  2. Pour into a greased 13x9 dish. Top with chopped onion and halved black olives. Bake at 350 degrees for 30 minutes.
  3. Top with a thin layer of salsa, sliced jalapenos, and cover with the other cup of cheese . Bake until cheese melts, and starts to brown a little.
