easy spicy black beans and rice casserole

I just made this, it was delicious and will serve 4-6, contains no meat.

Ingredients

  • 2-3 cups cooked white or brown rice
  • 1 can black beans rinsed and drained
  • 1 can niblets corn
  • 2 cups shredded cheese, divided
  • 1 cup lowfat sour cream
  • 1 cup salsa
  • 1 can black olives
  • 1 - small to medium red onion chopped
  • 1 can sliced jalapeno peppers, not pickled
  • 1 can rotel
  • * - or 1 28 oz can tomates, + small chopped onion, +jalapeno's to taste, +1 tsp onion salt,+ 1/2 tsp cumin, +pinch of sugar,and chopped hot peppers, 1 -3tbs,... instead of the rotel and salsa

How To Make easy spicy black beans and rice casserole

  • Step 1
    In a large bowl, mix rice, beans corn, rotel, salsa, sour cream and 1 cup of cheese. (I added Tobasco sauce, about 3 shakes, was Very spicy, like WE like it.)
  • Step 2
    Pour into a greased 13x9 dish. Top with chopped onion and halved black olives. Bake at 350 degrees for 30 minutes.
  • Step 3
    Top with a thin layer of salsa, sliced jalapenos, and cover with the other cup of cheese . Bake until cheese melts, and starts to brown a little.
