Ingredients
- 2-3 cups cooked white or brown rice
- 1 can black beans rinsed and drained
- 1 can niblets corn
- 2 cups shredded cheese, divided
- 1 cup lowfat sour cream
- 1 cup salsa
- 1 can black olives
- 1 - small to medium red onion chopped
- 1 can sliced jalapeno peppers, not pickled
- 1 can rotel
- * - or 1 28 oz can tomates, + small chopped onion, +jalapeno's to taste, +1 tsp onion salt,+ 1/2 tsp cumin, +pinch of sugar,and chopped hot peppers, 1 -3tbs,... instead of the rotel and salsa

Step 1In a large bowl, mix rice, beans corn, rotel, salsa, sour cream and 1 cup of cheese. (I added Tobasco sauce, about 3 shakes, was Very spicy, like WE like it.)

Step 2Pour into a greased 13x9 dish. Top with chopped onion and halved black olives. Bake at 350 degrees for 30 minutes.

Step 3Top with a thin layer of salsa, sliced jalapenos, and cover with the other cup of cheese . Bake until cheese melts, and starts to brown a little.
