easy spanish rice
This is my quick and easy version of Spanish Rice. I use it for a main course, but you can also use it as a side dish. Make it spicy or not.

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 - green pepper, diced
- 1 cup basmati rice, rinsed and drained
- 1 package morningstar farm® meal starters grillers® recipe crumbles™ (or if you desire, 1 lb ground beef, cooked and drained)
- 3 cups vegetable juice (such as v8®) or tomato juice
- dash cayenne (to taste)
- - salt and pepper to taste
How To Make easy spanish rice

Step 1Heat oil in large skillet. Add onion, garlic and green pepper and saute until tender.

Step 2Stir in rice. Cook for 2 minutes. Add Grillers (or ground beef), vegetable juice, cayenne and salt and pepper. Cover and cook until rice is tender and has absorbed the liquid-about 20 minutes. Stir occasionally.

Step 3Adjust seasoning, if necessary, and serve.
