easy spanish rice

This is my quick and easy version of Spanish Rice. I use it for a main course, but you can also use it as a side dish. Make it spicy or not.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 - green pepper, diced
  • 1 cup basmati rice, rinsed and drained
  • 1 package morningstar farm® meal starters grillers® recipe crumbles™ (or if you desire, 1 lb ground beef, cooked and drained)
  • 3 cups vegetable juice (such as v8®) or tomato juice
  • dash cayenne (to taste)
  • - salt and pepper to taste

How To Make easy spanish rice

  • Step 1
    Heat oil in large skillet. Add onion, garlic and green pepper and saute until tender.
  • Step 2
    Stir in rice. Cook for 2 minutes. Add Grillers (or ground beef), vegetable juice, cayenne and salt and pepper. Cover and cook until rice is tender and has absorbed the liquid-about 20 minutes. Stir occasionally.
  • Step 3
    Adjust seasoning, if necessary, and serve.
