easy kid friendly encheladas

This is great with mexican sides and salad. My kids go crazy over this. You can also add onions if you like. but being kid friendly I dont add them.

Ingredients

  • 1 can nacho cheese soup
  • 1 can cream of chicken soup
  • 1 pound ground beef, chicken or turkey
  • 1 can rotel tomatoes
  • 1 package corn tortillias
  • 1 pound medium sharp shredded cheese
  • 1 can red enchelada sauce (mild, med, or hot)

How To Make easy kid friendly encheladas

  • Step 1
    pre heat oven to 350.
  • Step 2
    brown meat and drain. add rotel tomatoes and brown a little longer.
  • Step 3
    Add both cans of soup to meat mix. Let warm.
  • Step 4
    heat corn tortillias in microwave for about 30 sec.
  • Step 5
    put enchelada sause in a bowl and heat till warm.
  • Step 6
    get a casarole dish and dip tortillas in the sauce. layer tortillas(with sauce) meat mix hand full of cheese. Layer that till you build it up as much as you can. top of with more cheese.
  • Step 7
    put in the oven for about 20 min. to heat all the way through and melt the cheese. serve with chips and any side you like.
