easy cheesy enchiladas

This recipe is from my good friend Mary Fitzgerald. We had a Mexican Fiesta at our home and she brought this dish. We LOVED it! It was so easy! I never get tired of this recipe and my family always gets excited when I tell them it's Cheese Enchilada night! I serve this with Mexican Rice and Pinto Beans!

Ingredients

  • - grapeseed oil cooking spray
  • 1 1/2 cups butter
  • 18 - white corn tortillas
  • 4 cups mexican/fiesta cheese or your favorite
  • 2 cans old el paso mild enchilada sauce
  • 4 - green onions

How To Make easy cheesy enchiladas

  • Step 1
    Preheat oven to 350 degrees! This is a repeating recipe!
  • Step 2
    Melt 1 1/2 Cups of Butter in a small pot on the stove
  • Step 3
    Spray 9x13 baking dish with grapeseed oil non-stick spray
  • Step 4
    Layer 6 Tortillas in the baking dish (tear in strips for easier portions)
  • Step 5
    Pour 1/2 C butter over tortillas (use a spoon or spatula to spread)to cover all of them
  • Step 6
    Sprinkle 2 C Cheese over tortillas evenly
  • Step 7
    Layer 6 tortillas over Cheese (tear in strips and spread evenly over mixture)
  • Step 8
    Pour 1/2 C butter over tortillas (spread around) and then pour 1 can of enchilada sauce over the buttered tortillas
  • Step 9
    Now, sprinkle most of the second 2 C Cheese on top of enchilada sauce
  • Step 10
    Pour 1/2 C butter over tortillas (spread around) and then pour 1 can of enchilada sauce on top of tortillas (spread around)
  • Step 11
    Chop 4 Green Onions and sprinkle on top of sauce and sprinkle remaining cheese on top.
  • Step 12
    Bake for 20 minutes, eat and enjoy!
