easy cheesy enchilada casserole

I got tired of the mess and time involved when making enchilada's so I decided I would try making it a casserole. It worked great and everybody loves it.

Ingredients

  • 1 package 12 tortillas
  • 2 small cans enchilada sauce
  • 1 small can sliced black olives
  • 1 can chopped green chilies
  • 4 cups mexican blend shredded cheese

How To Make easy cheesy enchilada casserole

  • Step 1
    Cook tortillas in oil, cut in half pile one half on the other and cut in half again. Pour a small amount of enchilada sauce on the bottom of baking dish. Just enough to cover the bottom. Start layering with tortilla more sauce to cover tortillas then cheese, black olives, and green chili's when finished with layers add the remaining sauce and place in microwave for 8 to 10 min. Place under broiler until cheese on top has turned an nice golden brown.
  • Step 2
    This dish can be baked in the oven on 350 if preferred for about 30 to 45 min. Meat hamburger, chopped steak, chicken or pork can be added during layering. This is a great way to use leftover meat.
