This is a wonderful civeche recipe given to me by a good friend.

Ingredients

  • 1 pound cooked prawns (cut in chunks)
  • 2 tablespoons salt
  • 3/4 cup lemon & lime juice
  • 1 cup chopped red onion
  • 1/2 cup cilantro, fresh
  • 1 teaspoon oregano
  • 1 large cucumber peeled & sliced into 1/2
  • 1 large avocado cut into 1/2

How To Make civeche

  • Step 1
    In a non-reactive casserole dish, either Pyrex or ceramic, place the shrimp, onion, salt and oregano. Cover with lime and lemon juice. Let sit covered in the refrigerator for an hour, then stir, making sure more of the fish gets exposed to the acidic lime and lemon juices. Let sit for several hours, giving time for the flavors to blend.
  • Step 2
    Add cucumber & avocado right before serving.
