  • 2 c
    cooked rice
  • 2 c
    sour cream
  • 1/2 lb
    shredded jack cheese
  • 7 oz
    diced green chilies
  • 3 Tbsp
  • 1/4 c
    grated parmesan cheese
  • ·
    salt to taste
  • ·
    cooked chicken (optional)

How to Make Chili Rice Casserole


  1. Mix cooked rice with sour cream and salt. Spread 1/2 of the mixture in a 1.5 qt casserole dish.
  2. Sprinkle with jack cheese and chilies. Top with remaining rice mixture. Dot with butter and sprinkle with parmesean cheese. Bake at 350 for 30 minutes.
  3. Optional: You can add cooked chicken in the middle layer if you are making a main course.
