chili rice casserole

This recipe has been in my box for years. I don't remember where it came from but I make it often.

Ingredients

  • 2 cups cooked rice
  • 2 cups sour cream
  • 1/2 pound shredded jack cheese
  • 7 ounces diced green chilies
  • 3 tablespoons butter
  • 1/4 cup grated parmesan cheese
  • - salt to taste
  • - cooked chicken (optional)

How To Make chili rice casserole

  • Step 1
    Mix cooked rice with sour cream and salt. Spread 1/2 of the mixture in a 1.5 qt casserole dish.
  • Step 2
    Sprinkle with jack cheese and chilies. Top with remaining rice mixture. Dot with butter and sprinkle with parmesean cheese. Bake at 350 for 30 minutes.
  • Step 3
    Optional: You can add cooked chicken in the middle layer if you are making a main course.
