Ingredients

  • 1 1/2 cups mexican blend cheese, divided
  • 1 can evaporated skim milk
  • 3 - eggs, beaten
  • 6 - corn tortillas, torn into 2 inch pieces
  • 2 cans chopped green chiles
  • 1/2 cup mild chunky salsa
  • 1/4 teaspoon salt (optional)
  • 2 tablespoons chopped fresh cilantro

How To Make chili relleno casserole

  • Step 1
    Coat 10 inch deep dish pie plate or 8 inch square baking dish with nonstick cooking spray.
  • Step 2
    In medium bowl, combine 1 cup cheese, milk, eggs, tortillas, chiles, salsa & salt. Mix well; pour into prepared dish.
  • Step 3
    Bake at 375 for 30 to 32 mins or until set. Remove from oven; sprinkle with remaining 1/2 cup cheese and cilantro. Return to oven; bake 1 minute or until cheese is melted. Serve with Sour Cream if desired
