My husband loves chile rellenos and I finally have a recipe he likes.

ortega whole chile peppers
1 (8 oz) pkg
shredded cheese (cheddar, mexican, or your own mix)
1 lb
pepper jack cheese (loaf or sticks)
1/2 c
2 c
1 tsp
1/2 tsp
minced garlic

How to Make Chile Rellenos Casserole


  • 1Set oven to 350 degrees.
  • 2Spray 9x12 casserole with non-stick spray.
  • 3Seed chiles.
  • 4Stuff each chile with a strip of pepper jack cheese and arrange in the bottom of casserole dish.
  • 5Cover with shredded cheese.
  • 6Beat flour, eggs, milk, salt, and garlic together and pour over cheese and chiles.
  • 7Bake 50-60 minutes or until custard is set.
