My husband loves chile rellenos and I finally have a recipe he likes.

Ingredients

  • 1 (14 oz) can ortega whole chile peppers
  • 1 (8 oz) package shredded cheese (cheddar, mexican, or your own mix)
  • 1 pound pepper jack cheese (loaf or sticks)
  • 1/2 cup flour
  • 3 - eggs
  • 2 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon minced garlic

How To Make chile rellenos casserole

  • Step 1
    Set oven to 350 degrees.
  • Step 2
    Spray 9x12 casserole with non-stick spray.
  • Step 3
    Seed chiles.
  • Step 4
    Stuff each chile with a strip of pepper jack cheese and arrange in the bottom of casserole dish.
  • Step 5
    Cover with shredded cheese.
  • Step 6
    Beat flour, eggs, milk, salt, and garlic together and pour over cheese and chiles.
  • Step 7
    Bake 50-60 minutes or until custard is set.
