Ingredients

  • 10 c
    diced cooked chicken
  • 10 c
    chopped celery
  • 2 bunch
    green onions with tops, sliced
  • 2 can(s)
    (4 ounces each) chopped green chilies
  • 1 can(s)
    (5 3/4 ounces) pitted ripe olives, drained and sliced
  • 2 c
    almonds, slivered
  • 5 c
    shredded cheddar cheese, divided
  • 2 c
    mayonnaise
  • 2 c
    (16 ounces) sour cream
  • 5 c
    potato chips

How to Make Chicken & Green Chili Casserole

Step-by-Step

  1. Combine the first 6 ingredients.
  2. Add 2 cups cheese.
  3. Mix mayonnaise and sour cream; add to chicken mixture and toss.
  4. Spoon into two greased 13x9 inch x 2 inch baking dishes. You can make this ahead, cover and store in refrigerator. When ready to bake, sprinkle with chips.
  5. Top with remaining cheese. Bake uncovered at 350 degrees for 20 to 25 minutes or until hot.
