had a friend of my moms show me this when I was very young. every time I cook it people love it, even the kids.
you can change it up to be hot or mild.
good hot or cold.

    whole chicken
  • 2 box
    8oz cream cheese
  • 8 oz
    shreeded cheese, your prefance
  • 1 qt
    half and half
  • 24 medium
    corn tortillas
  • 1 jar(s)
    green chiles, mild or hot (to taste)

How to Make Chicken Enchaladas


  1. need cassarole dish, heat over 375, cook for 45min to 1 hour
  2. cook chicken until tender, de-bone and shred.
    mix in the cream cheese and chile, i mix by hand so not to make mushey.
    sofen the corn tortillas in canola oil.
    add 3-4 Tbsp of the chicken mix and roll up
    cont.until mixture is gone, you can stack 2 high
    add shreaded cheese on top, pour half and half on top
    then bake.
