I was experiment on a Mexican dish that my Husband was craving for. He was hungry for Enchiladas, and I didn't want to go out and eat at a restaurant, so I decided to try and make my own. He loved it and now I have to fix this at least 2 times every month.

Ingredients

  • 1 pound hamburger
  • 2 cans enchillada sauce (6 oz)
  • 1 package enchillada mix
  • 1 package mexican blend shredded cheese
  • 1 can refried beans (any size)
  • 1 package corn tortillias
  • bottle canola oil

How To Make cheesy enchilada

  • Step 1
    With a fork fry the hamburger into small pieces. Smaller the better. Then drain the grease
  • Step 2
    Add Enchilada Mix and 1 can of enchilada sauce to the Hamburger meat. Mix together until completely mixed.
  • Step 3
    In frying pan put 1 tbsp Canola Oil in on med heat. Dip each corn tortilla in Oil.Leave in 30 secs on both sides. Then put into a deep pan. Put a tbsp refried beans over middle of Tortilla. Then add Mixture of hamburger and sauce into one side of tortilla, and add cheese on top of that, and roll and place in the pan. Fill the pan up and pour the 2nd can of Enchilada Sauce over all of them. Then add More cheese to cover the tops. Cook in the over for approximately 30 minutes.
