Ingredients
- 10 ounces enchilada sauce (la victoria, mild)
- 15 ounces canned chili (wolf brand)
- 6-8 - frozen taquitos
- ALTERNATIVE TO TAQUITOS
- 6-8 - corn tortillas
- 2 cups shredded cheddar cheese (or cooked, seasoned beef)
- 3-4 teaspoons minced onion
How To Make cheater enchiladas

Step 1Combine enchilada sauce and chili; mix well. Spoon a small amount into the bottom of a 9"x 7" baking dish, spreading to cover lightly.

Step 2Place taquitos in a single layer over the sauce. NOTE: When I used the whole package of taquitos, there wasn't enough sauce, which is why I only recommend 6-8.

Step 3If using alternative method, spoon 1/2 tsp. onion and 1/4 c. cheese into each tortilla and roll up tightly, then place in a single layer in baking dish.

Step 4Pour remaining sauce over taquitos. If desired, top with extra cheese.

Step 5Bake at 400 degrees for 15 - 20 minutes, until cheese is melted and sauce is bubbly.
