brandy's king ranch chicken
This is my version of King Ranch Chicken and its a very creamy, comfort food!

Ingredients
- 3 pounds chicken, boiled and shredded
- 2 pounds deli american cheese( *you can use mexican or regular velveeta if that's your preference. )
- 1 package white corn tortillas, torn into pieces
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1/2 cup chicken broth
- 1 can rotel, diced tomatoes (i like a lot of this, so i use the bigger can)
- 1 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1 cup heavy whipping cream
- 8 ounces shredded cheddar cheese (grated yourself)
- 1 can green chiles (small diced roasted)
How To Make brandy's king ranch chicken

Step 1Grease a 13x9 baking dish and preheat oven to 350 degrees.

Step 2Saute in a tbsp or so of butter the onion and bell pepper. On the side in a large microwave safe mixing bowl, place cubed cheese, rotel, roasted diced green chiles, soups and broth until smooth.

Step 3In baking dish, layer torn tortillas, chicken, soup mixture, then tortillas, chicken, soup mixture again. Place one more layer of tortillas and top with shredded cheddar. Place dish in oven and bake for one hour COVERED. After an hour, uncover and bake for another 10 minutes.
