This is my version of King Ranch Chicken and its a very creamy, comfort food!

Ingredients

3 lbchicken, boiled and shredded

2 lbmexican velveeta
-
1 pkgwhite corn tortillas, torn into pieces

1 can(s)cream of chicken soup
-
1 can(s)cream of mushroom soup
-
1/2 cchicken broth
-
1 can(s)rotel, diced tomatoes (i like a lot of this, so i use the bigger can)

1 cchopped onion
-
1/2 cchopped green bell pepper
-
1 cheavy whipping cream
-
8 ozshredded cheddar cheese
How to Make Brandy's King Ranch Chicken
- Grease a 13x9 baking dish and preheat oven to 350 degrees.
- Saute in a tbsp or so of butter the onion and bell pepper. On the side in a large microwave safe mixing bowl, place cubed velveeta, rotel, soups and broth until smooth.
- In baking dish, layer torn tortillas, chicken, soup mixture, then tortillas, chicken, soup mixture again. Place one more layer of tortillas and top with shredded cheddar. Place dish in oven and bake for one hour COVERED. After an hour, uncover and bake for another 10 minutes.
