This is my version of King Ranch Chicken and its a very creamy, comfort food!

  • 3 lb
    chicken, boiled and shredded
  • 2 lb
    mexican velveeta
  • 1 pkg
    white corn tortillas, torn into pieces
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of mushroom soup
  • 1/2 c
    chicken broth
  • 1 can(s)
    rotel, diced tomatoes (i like a lot of this, so i use the bigger can)
  • 1 c
    chopped onion
  • 1/2 c
    chopped green bell pepper
  • 1 c
    heavy whipping cream
  • 8 oz
    shredded cheddar cheese

How to Make Brandy's King Ranch Chicken


  1. Grease a 13x9 baking dish and preheat oven to 350 degrees.
  2. Saute in a tbsp or so of butter the onion and bell pepper. On the side in a large microwave safe mixing bowl, place cubed velveeta, rotel, soups and broth until smooth.
  3. In baking dish, layer torn tortillas, chicken, soup mixture, then tortillas, chicken, soup mixture again. Place one more layer of tortillas and top with shredded cheddar. Place dish in oven and bake for one hour COVERED. After an hour, uncover and bake for another 10 minutes.
  4. ENJOY!
